Slow Food and New Forms of Mobility: in the Construction of Foodscapes. The Case of Seville

The interaction between mobility, natural and cultural landscape is at the centre of growing academic debates, especially in the field of geography. This paper aims to investigate the complex relationship between so-called “slow food” and the mobility of the landscapes. The contribution focuses on how the diffusion of slow food, understood – socially and culturally – as heritage, contributes to the material and symbolic transformation of urban and rural landscapes, creating new spatialities. The link between food and slowness is profoundly influenced by globalisation and in response to the effects of homogenisation and depersonalisation that characterise this phenomenon, attempts are increasingly being developed to recover the locality, wholesomeness and authenticity of food. According to the “new mobility paradigm”, in contemporary times, forms of deterritorialisation are accompanied by reterritorialisation processes of various kinds. From this perspective, the evolution of foodscapes is the result of complex hybridisations between dynamic mobile and interconnected. The contribution, through field research conducted in two different areas of Seville in 2022, carried out using qualitative research tools, intends to examine how mobilities are interrelated with new practices and lifestyles related to food, influencing, in some cases, the construction of so-called “rurban” landscapes.
